The Antinori family has great respect for the bounty that the land provides. This goes beyond the grapes that are grown on their estates. At Castello della Sala, the sheep provide the milk that is made into cheese. Cinta Senese, the famous Tuscan black and white pig, are raised at Guado al Tasso, and provides ham that is cured into prosciutto. At Tignanello, olives are harvested and pressed into Laudemio Extra Virgin Olive Oil. At the Antinori-Antica Estate the spirit of the Italian farm continues. The trees are interwoven throughout the vineyard and sustainably farmed.
Planted among our estate vineyards are groves of olives, which like our vines, are sustainably farmed. The oil is extra virgin, the highest grade an oil can receive, meaning no chemicals or extreme heat were used in the extraction process, and that it has been evaluated by a trained, third-party panel to be free of defects of flavor or odor.
